The plants flourish with shaded sun, and automated misting systems. Different orchid varieties prefer misting at intervals, ranging from hourly to weekly. Modern technology has enabled large scale proliferation of varieties and cross fertilization, but it still takes 2-12 years for a new plant to reach blooming maturity. Currently, phalenopsis (sometimes called moth orchids) are in bloom and ans assortment of the color range is attached.
Chile relleno is frequently found on Mexican and Tex-Mex menus, mostly fairly ordinary, but we did find this outstanding variation at Z’Tejas Restaurant outside of Austin Texas. And the chef has gratiously posted his recipe on the web.
SMOKED CHICKEN AND APRICOT RELLENO
Source: ABC, Channel 4, GTU / Utah Recipe from Z’Tejas, Chef Kirk Doye FOR THE APRICOT MIX: Saute margarine, apricot, and red onion for 5 minutes. Add Tomatillo and salsa; saute 5 minutes. Add raisins and pecans: saute 5 minutes. Add cheese and allspice; mix well and remove from heat. Cool down in storage container *Roast pecans on sheet pan in 350 degree oven for about 5-7 minutes. TO MAKE RELLENOS: Roast Poblanos then peel and de-seed. Make stuffing by adding smoked chicken, apricot mix and the Jack cheese together. Stuff each pepper to desired size. Microwave about 2 minutes or until heated throughout. ——————————————————— Serve with green chile mole, roasted tomato cream, Tejas rice and black beans.
There is a large population of wild chickens in the lower keys. They have been immortalized with this sculpture in a tiny public park in Key West. Several unusual animals, not indigenous to the keys, are now thriving in the wild, and there are mixed feelings about their desirability. Most notably, the city has hired chicken catchers, to the dismay of the pro chicken activists. But there are also iguana feeders, and a large underground population of iguana hunters. Found this recipe in the 1971 McCall’s first Cooking School magazine. McCall’s titled it ” Perfect Chocolate Cake ” and it truely is. Moreover, it’s easy to make and can be done ahead and refrigerated. Just one caution: With 3 layers it goes a long way and you still won’t have to worry about having any left. Filling: 1 cup heavy cream (chilled), 1/4 cup confectioners’ sugar, 1 tsp vanilla Whip cream, sugar and vanilla together and refrigerate. Cake: 1 cup unsweetened cocoa, 2 cups boiling water Mix with wire whisk until smooth. Cool completely. Preheat oven to 350. Grease and lightly flour three (9.5 inch round) layer cake pans. 2 & 3/4 cups all-purpose flour, 2 tsp baking soda, 1/2 tsp salt, 1/2 tsp baking powder Sift or stir these together, put aside. 2 & 1/2 cups granulated sugar, 4 eggs, 1 cup soft butter or margarine, 1 & 1/2 tsp vanilla extract Beat sugar, eggs, butter and vanilla in large bowl on high until light. ( 5 minutes ). Add flour ( 1/4 at a time ) then cocoa mixture ( 1/3 at a time ) on low speed. Begin and end with flour. Do not overbeat. Divide evenly into 3 cake pans. Tip: If you line pans with parchment paper, removal is easier. Bake 25 to 30 minutes or until surface springs back when gently pressed with fingertip. Cool pans 10 minutes. Loosen sides with spatula. Remove from pans and cool. Assemble by placing one layer, top side down; spread with 1/2 of cream. Place second layer, top side down; spread with rest of cream. Place third layer, top side up. Frost with your favorite chocolate, vanilla or other frosting. In our house pre-made chocolate frosting is a favorite. Refrigerate at least 1 hour before serving. To cut, use a thin-edged sharp knife; slice with a sawing motion. Serves 10-12. ——- Hungry for a gourmet cake? Click here to be tempted!
